Title: Salmon Caesar Salad

  Dressing, croutons and

1smYellow, red and/or green
  Bell pepper -- in julienne
  Strips
1/4cSliced pitted ripe olives
6ozSmoked salmon --
  Skinned/boned
  Broken in chunks -- OR
3 To 4 ounces
  Size strips -- OR
4ozGrilled or canned salmon --
  Skinned/boned
  Broken in chunks
  Fresh Caesar salad mix --
  Thinly sliced smoked salmed
  Lox style, in bite-

In a large salad bowl, combine the lettuce nad dressing from the salad mix, the sweet pepper strips and olives. Toss mixture gently to coat. Add the croutons and cheese from the mix and the salmon. Toss together before serving. Makes 3 main dish servings. Note: if you can't find packaged Caesar salad, substitute 5 cups torn mixed greens, 1/3 cup croutons, 3 Tbspsl bottled Caesar or ranch salad dressing, and 2 tablespoons of grated Parmesan cheese.
